2. Sweet potato chip spice cookies recipe

Yields 15 large cookies

Ingredients:

  • 1 cup unsalted butter, at room temperature
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1-1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 cups crushed sweet potato chips (you still want some larger crumbs for texture)
  • 1 cup butterscotch chips

Directions:

  1. Heat the oven to 350 degrees F.
  2. Using a stand mixer with the paddle attachment, cream together the butter and both sugars, mixing on medium for about 2 minutes.
  3. Stop the mixer, and add the egg and vanilla. Continue mixing for another 2 minutes on low.
  4. In a bowl, whisk together the flour, baking soda and cinnamon.
  5. Set the mixer to low, and add in the flour mixture a little at a time, allowing the flour to fully incorporate before adding more.
  6. Incorporate the crushed sweet potato chips with the mixture on low, or fold together with a spoon.
  7. Using a cookie scoop or 2 spoons, place scoops of the mixture on a baking sheet, leaving about 2 inches between each cookie.
  8. Bake for 8 to 10 minutes, in batches as needed.
  9. Allow the cookies to cool on a baking rack before serving.
