2. Sweet potato chip spice cookies recipe
Yields 15 large cookies
Ingredients:
- 1 cup unsalted butter, at room temperature
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1-1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 2 cups crushed sweet potato chips (you still want some larger crumbs for texture)
- 1 cup butterscotch chips
Directions:
- Heat the oven to 350 degrees F.
- Using a stand mixer with the paddle attachment, cream together the butter and both sugars, mixing on medium for about 2 minutes.
- Stop the mixer, and add the egg and vanilla. Continue mixing for another 2 minutes on low.
- In a bowl, whisk together the flour, baking soda and cinnamon.
- Set the mixer to low, and add in the flour mixture a little at a time, allowing the flour to fully incorporate before adding more.
- Incorporate the crushed sweet potato chips with the mixture on low, or fold together with a spoon.
- Using a cookie scoop or 2 spoons, place scoops of the mixture on a baking sheet, leaving about 2 inches between each cookie.
- Bake for 8 to 10 minutes, in batches as needed.
- Allow the cookies to cool on a baking rack before serving.
