3. Mason jar crunch salad recipe

Yields 1 (32 ounce) salad

Ingredients:

  • 1/2 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/8 cup roasted corn
  • 1/8 cup black beans
  • 1 tablespoon green onion
  • 1/8 cup halved cherry tomatoes
  • 1/2 cup seasoned ground beef (or chopped rotisserie chicken)
  • 1/8 cup shredded cheddar cheese (or pepper jack)
  • 1/4 avocado, diced
  • 1/4 cup chopped spinach
  • 1/3 cup Fritos

Directions:

  1. Pour the lime juice and olive oil into the bottom of the jar.
  2. Add the cumin and chili powder. Gently shake the jar to mix the vinaigrette together.
  3. Begin layering the ingredients in the jar, leaving items that need to stay crisp toward the top, like the spinach and Fritos.
  4. Place the lid on the jar. Keep refrigerated until ready to serve.
  5. When you are ready to eat, shake the jar to combine all the ingredients.
