3. Mason jar crunch salad recipe
Yields 1 (32 ounce) salad
Ingredients:
- 1/2 tablespoon lime juice
- 1 tablespoon olive oil
- 1/4 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/8 cup roasted corn
- 1/8 cup black beans
- 1 tablespoon green onion
- 1/8 cup halved cherry tomatoes
- 1/2 cup seasoned ground beef (or chopped rotisserie chicken)
- 1/8 cup shredded cheddar cheese (or pepper jack)
- 1/4 avocado, diced
- 1/4 cup chopped spinach
- 1/3 cup Fritos
Directions:
- Pour the lime juice and olive oil into the bottom of the jar.
- Add the cumin and chili powder. Gently shake the jar to mix the vinaigrette together.
- Begin layering the ingredients in the jar, leaving items that need to stay crisp toward the top, like the spinach and Fritos.
- Place the lid on the jar. Keep refrigerated until ready to serve.
- When you are ready to eat, shake the jar to combine all the ingredients.
