4. Chips-quiles (chilaquiles) recipe

Serves 4

Ingredients:

  • 4 medium tomatillos, husks removed, chopped
  • 1 jalapeño, seeds removed (keep the seeds for a spicier sauce)
  • 1/2 small onion
  • 2 garlic cloves
  • 2 cups chicken broth
  • 1/2 teaspoon dried oegano
  • Salt and pepper, to taste
  • 1 tablespoon vegetable oil
  • 1 (10.5 ounce) bag Cool Ranch Doritos
  • 1 cup shredded Monterey Jack cheese
  • 4 eggs
  • Additional toppings, as desired: queso fresco, Mexican crema or sour cream, thinly sliced radish, thinly sliced red onion, sliced avocado, cilantro

Directions:

  1. Heat the oven to 350 degrees F.
  2. To a saucepan, add the tomatillos, jalapeño, garlic and chicken broth. Bring to a boil, and reduce the heat to simmer.
  3. Cook covered until the vegetables become soft and begin to break apart, about 15 to 20 minutes.
  4. Transfer the mixture to a blender.
  5. Add the oregano and salt and pepper, to taste. Blend until smooth.
  6. In a saucepan, heat the oil, and pour in the verde sauce.
  7. Stir, and cook over low for about 10 minutes to let the sauce reduce slightly.
  8. Place the Doritos in an oven-safe dish. Spoon the sauce over the chips, and top with cheese.
  9. Bake for 10 to 15 minutes, until the cheese melts.
  10. Cook the eggs as desired (sunny-side up or scrambled).
  11. Top with desired toppings, and serve with eggs.
