4. Chips-quiles (chilaquiles) recipe
Serves 4
Ingredients:
- 4 medium tomatillos, husks removed, chopped
- 1 jalapeño, seeds removed (keep the seeds for a spicier sauce)
- 1/2 small onion
- 2 garlic cloves
- 2 cups chicken broth
- 1/2 teaspoon dried oegano
- Salt and pepper, to taste
- 1 tablespoon vegetable oil
- 1 (10.5 ounce) bag Cool Ranch Doritos
- 1 cup shredded Monterey Jack cheese
- 4 eggs
- Additional toppings, as desired: queso fresco, Mexican crema or sour cream, thinly sliced radish, thinly sliced red onion, sliced avocado, cilantro
Directions:
- Heat the oven to 350 degrees F.
- To a saucepan, add the tomatillos, jalapeño, garlic and chicken broth. Bring to a boil, and reduce the heat to simmer.
- Cook covered until the vegetables become soft and begin to break apart, about 15 to 20 minutes.
- Transfer the mixture to a blender.
- Add the oregano and salt and pepper, to taste. Blend until smooth.
- In a saucepan, heat the oil, and pour in the verde sauce.
- Stir, and cook over low for about 10 minutes to let the sauce reduce slightly.
- Place the Doritos in an oven-safe dish. Spoon the sauce over the chips, and top with cheese.
- Bake for 10 to 15 minutes, until the cheese melts.
- Cook the eggs as desired (sunny-side up or scrambled).
- Top with desired toppings, and serve with eggs.
