5. Chip-crusted chicken Parmesan recipe

Serves 4

Ingredients:

  • 4 thin chicken breast cutlets (or pounded out if thick)
  • 1 cup finely crushed Sour Cream and Onion Pringles
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon melted butter
  • 1 tablespoon olive oil
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Mixed greens
  • Basil or parsley, for garnish

Directions:

  1. Heat the oven to 400 degrees F.
  2. In a shallow dish, combine the crushed Pringles, ground pepper, Italian seasoning and grated Parmesan.
  3. In a small bowl, combine the melted butter and olive oil.
  4. Lay the chicken cutlets on a lined baking sheet.
  5. Brush each side of each cutlet with the butter-oil mixture.
  6. Crust each cutlet in the seasoned Pringles, pressing firmly to get the crushed chips to stick.
  7. Return each cutlet to the lined baking sheet
  8. Spray each cutlet with olive oil cooking spray to help brown while cooking.
  9. Bake for 15 minutes, until the chicken is cooked through and the crust has browned.
  10. Remove from the oven, then spoon about 1/4 cup of the marinara onto each piece of chicken, and sprinkle with cheese.
  11. Return to the oven, and bake for an additional 5 minutes, until the cheese melts.
  12. Garnish as desired, and serve with lightly dressed mixed greens.
