5. Chip-crusted chicken Parmesan recipe
Serves 4
Ingredients:
- 4 thin chicken breast cutlets (or pounded out if thick)
- 1 cup finely crushed Sour Cream and Onion Pringles
- 1/2 teaspoon ground black pepper
- 1 tablespoon Italian seasoning
- 1/4 cup grated Parmesan cheese
- 1 tablespoon melted butter
- 1 tablespoon olive oil
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Mixed greens
- Basil or parsley, for garnish
Directions:
- Heat the oven to 400 degrees F.
- In a shallow dish, combine the crushed Pringles, ground pepper, Italian seasoning and grated Parmesan.
- In a small bowl, combine the melted butter and olive oil.
- Lay the chicken cutlets on a lined baking sheet.
- Brush each side of each cutlet with the butter-oil mixture.
- Crust each cutlet in the seasoned Pringles, pressing firmly to get the crushed chips to stick.
- Return each cutlet to the lined baking sheet
- Spray each cutlet with olive oil cooking spray to help brown while cooking.
- Bake for 15 minutes, until the chicken is cooked through and the crust has browned.
- Remove from the oven, then spoon about 1/4 cup of the marinara onto each piece of chicken, and sprinkle with cheese.
- Return to the oven, and bake for an additional 5 minutes, until the cheese melts.
- Garnish as desired, and serve with lightly dressed mixed greens.
