Antipasto in salami cups recipe

Yields 24

Ingredients:

  • 24 slices Hormel Natural Choice Uncured Hard Salami
  • 2 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • Salt and pepper, to taste
  • 1/2 cup diced artichoke hearts
  • 1/4 cup diced green olives
  • 1/4 cup diced pepperoncini
  • 1/4 cup diced roasted red pepper
  • 1/4 cup diced feta cheese

Directions:

  1. Heat the oven to 400 degrees F.
  2. Cut a slit from the edge to the center of each slice of salami.
  3. Form a cone with each salami slice, and place in a mini muffin tin.
  4. Bake for 10 minutes, until the salami edges brown and hold the cone shape.
  5. Transfer the salami cups to a platter or wire rack for cooling.
  6. In a medium bowl, whisk together the oil and vinegar, then add the salt and pepper, and whisk again.
  7. In another bowl, place all the other ingredients, and stir to combine well.
  8. Spoon a small amount of the mixture into each salami cup.
