2. Pumpkin spice-sweet potato mash recipe

Serves 4

Ingredients:

  • 4 large sweet potatoes, peeled and diced
  • 4 tablespoons butter
  • Salt and pepper, to taste
  • 2 tablespoons flour
  • 1 cup vegetable stock
  • 1/2 cup heavy cream
  • 1 tablespoon pumpkin spice

Directions:

  1. In a pot, place the sweet potatoes, and cover them with water.
  2. Over medium heat, bring the water to a boil, and cook the sweet potatoes for 15 to 20 minutes, until tender.
  3. Drain the water from the sweet potatoes, and return them to the warm pot. Turn off the heat.
  4. Mash with 2 tablespoons of the butter and the salt and pepper, to taste, then set aside.
  5. In a saucepan, melt the remaining 2 tablespoons of butter.
  6. Whisk in the flour, and cook for 2 minutes.
  7. Whisk in the vegetable stock and heavy cream until well combined and there are no lumps.
  8. Bring to a low simmer, and let the sauce thicken.
  9. Stir in the pumpkin spice.
  10. Spoon the gravy over the mashed sweet potatoes, and serve warm.
