2. Pumpkin spice-sweet potato mash recipe
Serves 4
Ingredients:
- 4 large sweet potatoes, peeled and diced
- 4 tablespoons butter
- Salt and pepper, to taste
- 2 tablespoons flour
- 1 cup vegetable stock
- 1/2 cup heavy cream
- 1 tablespoon pumpkin spice
Directions:
- In a pot, place the sweet potatoes, and cover them with water.
- Over medium heat, bring the water to a boil, and cook the sweet potatoes for 15 to 20 minutes, until tender.
- Drain the water from the sweet potatoes, and return them to the warm pot. Turn off the heat.
- Mash with 2 tablespoons of the butter and the salt and pepper, to taste, then set aside.
- In a saucepan, melt the remaining 2 tablespoons of butter.
- Whisk in the flour, and cook for 2 minutes.
- Whisk in the vegetable stock and heavy cream until well combined and there are no lumps.
- Bring to a low simmer, and let the sauce thicken.
- Stir in the pumpkin spice.
- Spoon the gravy over the mashed sweet potatoes, and serve warm.
