5. Pumpkin spice risotto recipe

Serves 4

Ingredients:

  • 5 cups vegetable stock
  • 2 tablespoons olive oil
  • 2 shallots, chopped
  • 2 garlic cloves, chopped
  • 1 cup Arborio rice
  • 1 tablespoon pumpkin spice
  • 1/2 cup white wine
  • 1/2 cup of pumpkin puree
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste

Directions:

  1. In a saucepan over low heat, heat the vegetable stock. Keep it warm, but do not let it boil.
  2. In a skillet, heat the olive oil over medium heat.
  3. Add the shallots and garlic, and cook for 3 to 5 minutes, until tender.
  4. Add in the rice and pumpkin spice, and toast until the rice begins to brown.
  5. Add in the white wine. Cook, and let the wine evaporate while stirring.
  6. Continue stirring constantly, adding 2 to 3 ladles of the warm vegetable stock, and let the liquid evaporate. Repeat with the remaining stock.
  7. Once the rice is tender and most of the liquid has evaporated, reduce the heat to low, and add in the pumpkin puree.
  8. Stir in the Parmesan cheese, and season with salt and pepper, to taste.
