Turkey sweet potato hash recipe
Yields 4
Ingredients:
- 1 (8 ounce) package Hormel Natural Choice Oven Roasted Deli Turkey, chopped
- 5 cups sweet potatoes, diced
- 1 bunch kale, chopped
- 1 cup onion, chopped
- 1 red bell pepper, chopped
- 5 large eggs
- Coarse salt and black pepper to taste
- 2 tablespoons extra virgin olive oil
- Grated Parmesan cheese for topping
Directions:
- Preheat oven to 400 degrees F.
- In 12-inch cast-iron skillet, heat olive oil over medium-high heat.
- Add sweet potato to skillet without stirring. Cook until bottoms of cubes are golden brown.
- Stir and cook sweet potato until tender, 10-12 minutes.
- When sweet potatoes become tender, add onion and red bell pepper. Cook until vegetables are tender, 7-10 minutes.
- Stir in turkey and kale. Remove from heat.
- Create 5 wells in the hash around the skillet, and break 1 egg into each well created.
- Bake skillet for 10-15 minutes or until eggs are set.
- Remove from oven and garnish with grated Parmesan cheese.
