Turkey cranberry puff pastry recipe
Yields 12
Ingredients:
- 1-1/2 cups butternut squash, peeled, cut into 1/2-inch cubes
- 1 cup heirloom carrots, diced
- 1/2 large sweet onion, sliced
- 1 tablespoon olive oil
- Pinch of kosher salt
- 1/8 teaspoon freshly ground black pepper
- 1/4 cup honey
- 1 box (2 sheets) puff pastry, thawed
- 1 cup Hormel Natural Choice Oven Roasted Deli Turkey, chopped
- 1/3 cup dried cranberries
- 3/4 cup shredded Parmesan cheese
- 1 teaspoon rosemary
Egg wash:
- 1 large egg
- 1 tablespoon water
Directions:
- Preheat oven to 450 degrees F.
- Place veggies and onions in a medium bowl and toss with olive oil, salt and pepper.
- Spread onto parchment-lined baking sheet and bake for 20 minutes.
- Remove from oven and drizzle with honey.
- Turn oven temperature down to 400 degrees F.
- Unfold both pieces of puff pastry and set them on a cutting board that has been lined with parchment paper.
- With a pizza wheel, slice 6 squares from each sheet, making twelve 5 x 5-inch squares.
- Mix chopped turkey, cranberries, rosemary and cheese with cooled veggies.
- Spoon mixture onto half of the square.
- Fold the square into a triangle and lightly press the edges to seal.
- Mix egg and water together to create an egg wash.
- Brush the egg wash over each of the turnovers.
- Bake 20-30 minutes or until golden.
