Dark chocolate medallions recipe
Makes 6 servings, 4 pieces each
Ingredients:
- 1 (3.5 ounce) bar Green & Black’s Organic 70% Dark Chocolate, melted
- 1/4 cup goji berries or dried cranberries
- 2 tablespoons pistachios, shelled and coarsely chopped
- 1/4 cup shredded coconut
Directions:
- Line a baking pan with parchment paper.
- Mix together the goji berries, pistachios and shredded coconut.
- Make 24 (1-inch) circles of chocolate, 1 teaspoon of chocolate per circle.
- Sprinkle the berry mixture on top of the circles while the chocolate is still liquid.
- Let the chocolate harden, and then peel the medallions from the parchment paper.
- Store in an airtight container.
