Dark chocolate medallions recipe

Makes 6 servings, 4 pieces each

Ingredients:

  • 1 (3.5 ounce) bar Green & Black’s Organic 70% Dark Chocolate, melted
  • 1/4 cup goji berries or dried cranberries
  • 2 tablespoons pistachios, shelled and coarsely chopped
  • 1/4 cup shredded coconut

Directions:

  1. Line a baking pan with parchment paper.
  2. Mix together the goji berries, pistachios and shredded coconut.
  3. Make 24 (1-inch) circles of chocolate, 1 teaspoon of chocolate per circle.
  4. Sprinkle the berry mixture on top of the circles while the chocolate is still liquid.
  5. Let the chocolate harden, and then peel the medallions from the parchment paper.
  6. Store in an airtight container.
