Cookie truffle cupcakes for Santa recipe
Makes 12 cupcakes
Ingredients:
For the truffle cupcakes
- 1 cup loosely packed brown sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 3/4 cup milk
- 1/2 cup unsalted butter, at room temperature
- 1-1/2 cups all-purpose flour
- 1-1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 12 truffles from the Godiva Ultimate Dessert Truffle Flight
For the brown sugar frosting
- 1 cup softened butter
- 3 cups powdered sugar
- 1/2 cup brown sugar
- 2 tablespoons milk
- 1 teaspoon vanilla
Directions:
For the truffle cupcakes
- Heat the oven to 350 degrees F.
- In a bowl, combine the flour, baking soda and salt, and stir to mix. Set aside.
- Line a cupcake tin with liners.
- In a large bowl, whisk together the brown sugar and butter.
- Add the egg, and mix until smooth.
- Add in the vanilla extract and milk, and again, mix until combined.
- Add in the flour, soda and salt, and mix until the batter is smooth.
- Using a 1/4 cup measure, fill the liner halfway, and add your Godiva truffle. Add more batter till the liner is filled 3/4 of the way.
- Bake for 16 to 19 minutes or until the tops are puffy and golden and don’t jiggle when touched.
- Let cool completely.
For the brown sugar frosting
- Whip together the butter, vanilla and brown sugar.
- Gradually add in the powdered sugar.
- Slowly add in the milk till you reach your desired consistency.
- Frost your cupcakes, and top with 1 Godiva truffle.
