Cookie truffle cupcakes for Santa recipe

Makes 12 cupcakes

Ingredients:

For the truffle cupcakes

  • 1 cup loosely packed brown sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 3/4 cup milk
  • 1/2 cup unsalted butter, at room temperature
  • 1-1/2 cups all-purpose flour
  • 1-1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 12 truffles from the Godiva Ultimate Dessert Truffle Flight

For the brown sugar frosting

  • 1 cup softened butter
  • 3 cups powdered sugar
  • 1/2 cup brown sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla

Directions:

For the truffle cupcakes

  1. Heat the oven to 350 degrees F.
  2. In a bowl, combine the flour, baking soda and salt, and stir to mix. Set aside.
  3. Line a cupcake tin with liners.
  4. In a large bowl, whisk together the brown sugar and butter.
  5. Add the egg, and mix until smooth.
  6. Add in the vanilla extract and milk, and again, mix until combined.
  7. Add in the flour, soda and salt, and mix until the batter is smooth.
  8. Using a 1/4 cup measure, fill the liner halfway, and add your Godiva truffle. Add more batter till the liner is filled 3/4 of the way.
  9. Bake for 16 to 19 minutes or until the tops are puffy and golden and don’t jiggle when touched.
  10. Let cool completely.

For the brown sugar frosting

  1. Whip together the butter, vanilla and brown sugar.
  2. Gradually add in the powdered sugar.
  3. Slowly add in the milk till you reach your desired consistency.
  4. Frost your cupcakes, and top with 1 Godiva truffle.
