Turkey and mashed potato casserole
Ingredients:
- 1 can cream of mushroom soup
- 4 cups shredded leftover turkey
- 1 cup leftover gravy
- Salt and pepper to taste
- 4 cups mashed potatoes
- 2 cups Panko bread crumbs, separated
- 1/2 cup Parmesan cheese
- Parsley
Directions:
- Preheat oven to 400 degrees F.
- Combine cream of mushroom, turkey, gravy and seasonings.
- Fold in 1 cup of Panko bread crumbs.
- Spread 1/3 of the mashed potatoes to the bottom of a lightly greased 9 x 9-inch baking dish. Layer the turkey filling right on top of that and finish with the remaining mashed potatoes on top.
- Sprinkle the remaining Panko and Parmesan cheese on top and bake for 30 minutes or until the top is bubbly and golden brown.
- Sprinkle with parsley for garnish.
