Goat cheese and avocado omelette

It’s great to have a healthy recipe you can rely on for breakfast, lunch or dinner. And this goat cheese and avocado omelette certainly fits the bill!

Goat cheese and avocado omelette

Omelettes are a great meal option no matter the time of day. And this one is filled with plenty of healthy goodies to give you all the energy you need. Plus, the creaminess provided by the avocado and goat cheese makes for a dish that tastes absolutely divine. So eat up!

Ingredients:

  • 1 egg
  • 1/4 cup egg whites
  • 2 teaspoons butter or margarine
  • 2 tablespoons milk
  • 1 tablespoon olive oil
  • 1/2 small onion, diced
  • 3 button mushrooms, diced
  • 1/4 cup frozen spinach, thawed and drained
  • 2 tablespoons goat cheese, crumbled
  • 1/8 of an avocado
  • 2 tablespoons parsley, chopped
  • Pinch of salt (optional)

Directions:

Cook the onions

Place oil in a medium-sized pan. Add the onions, and cook over medium-low heat until they begin to sweat. Add in the mushrooms, and continue cooking until tender.

Add the spinach

Add in the spinach, and stir to combine. Transfer to a bowl.

Add the cheese

Add the goat cheese, avocado and parsley to the veggies. Stir to combine.

Mix the eggs

Combine the egg, egg whites, butter and milk. Gently pour the mixture into frying the pan. Keep heat low so as to not burn the egg mixture.

Add the veggies to the eggs

Once the bottom of the egg has begun to brown and the top is mostly solidified, scoop the mixture onto the egg in a straight line. Top with extra goat cheese if desired.

Fold up

Fold the sides of the egg over the mixture. Gently remove from heat with a wide, flat serving tool, and place the omelette onto a plate.

Serve

Sprinkle with salt and extra-chopped parsley for garnish if desired

Note: You can easily adjust this to yield more servings by multiplying the ingredients and assembling the omelettes one at a time.
