Whether you’re preparing for a work party, a potluck or having people over, you want to provide party guests with the best possible desserts. Well, these chocolate-covered peanut butter buckeyes will certainly deliver!
Few people can resist the delicious combination of peanut butter and chocolate. So if you want to impress your friends and family at the next party you hold or potluck you attend, these scrumptious little balls will certainly do the trick!
Peanut butter buckeyes

Recipe inspired by Sweet Pea’s Kitchen
Ingredients:
- 3/4 cup all-natural peanut butter (no sugar or oil added)
- 3 tablespoons butter, softened
- 1/2 teaspoon vanilla extract
- 1 cup icing sugar, sifted
- 1-1/2 cups semi-sweet chocolate chips
- 2 tablespoons canola oil
Directions:
- In a small bowl, combine the peanut butter, butter, vanilla and icing sugar.
- Roll the mixture into 1-inch balls, and place them on a waxed-paper-covered baking tray.
- Place in the fridge for 30 minutes.
- Remove the balls from the fridge, roll them again to ensure roundness, and insert a toothpick into each one.
- Return the tray to the fridge for another 30 minutes.
- Place the chocolate chips in a microwave-safe bowl. Cook in the microwave for 30 seconds at a time, stirring at each interval. This slow warming process is crucial so the chocolate doesn’t burn. After about two minutes, the chocolate chips should be mostly melted. Stir well until all have become liquid. Add in the canola oil, and stir thoroughly to combine. The chocolate should now run off a spoon easily.
- Remove the peanut butter balls from the fridge. Holding them by the toothpick, dip them one at a time into the chocolate mixture. Place them on the waxed paper, and return them to the fridge for 30 minutes.
- Gently pat down the toothpick holes to hide them. Transfer the balls to a serving tray or to a resealable container if serving them only later. Store them in the fridge until you’re ready to wow the crowd with them.

If you need these for a large group of people, simply multiply all the ingredients by two for 40 balls, three for 60 balls, etc. The minimal ingredients paired with the fact that the balls don’t need to be baked make them ideal for large events!
