Tasty lemon squares

Sometimes a rich piece of cake is just too much at the end of a satisfying meal. That’s when these tasty little lemon squares really come in handy.

Recipe adapted from The Canadian Living Christmas Book’s Citrus Squares

The right dessert can be the perfect finishing touch to a delightful meal. And if you don’t want to overdo it with something overly rich, these tasty lemon squares make for an ideal alternative.

Ingredients:

For the crust:

  • 1 cup flour
  • 1/4 cup brown sugar
  • 1/2 cup butter, cubed
  • 1/4 teaspoon salt

For the filling:

  • 1/2 a lemon
  • 1/4 cup lemon juice
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 eggs
  • Icing sugar (optional, for garnish)

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Place the flour, brown sugar, butter cubes and salt in a food processor, and combine until they form an even crumble.
  3. Press the crumbly mixture into a 9 x 9-inch square baking pan. Bake in the oven for 15 minutes.
  4. While the crust bakes, grind the lemon half with the lemon juice in the food processor until a fine pulp is formed. Add in the eggs, and continue processing. Then add in the flour, baking powder and sugar, and continue blending until fully combined.
  5. Remove the crust from heat, and let it cool for a few minutes. Reduce the oven heat to 325 degrees F. Pour the lemon mixture evenly over crust.
  6. Bake in the oven for 28–30 minutes. The topping should be relatively firm to the touch. Let cool before cutting into squares, and sprinkle with icing sugar if desired.
  7. Store the lemon squares in a resealable container in the fridge until ready to serve.
