Watermelon chia fresca

A traditional Mexican drink, chia frescas are a great source of sustained energy and are super-refreshing.

Serves 2

Ingredients:

  • 6 cups cubed watermelon
  • 1 sprig of mint leaves
  • 1/2 lime, skin removed
  • 1 heaping tablespoon of chia seeds

Directions:

  1. Run the watermelon, mint and lime through a good home juicer.
  2. Place the juice into a pitcher and stir in the chia seeds. Let the mixture sit in the refrigerator for 10 to 15 minutes to allow the chia seeds to absorb some of the juice and plump up.
