Salsa recipes that add more fruit to your diet

Making salsa with fruit is a fun alternative to traditional salsa, and is a great way to add more fruit to your diet.

Summer strawberry peach salsa

Serves 2-4

Ingredients:

  • 1 cup fresh strawberries, diced
  • 1 cup fresh peaches, diced
  • 1/2 lemon, freshly squeezed
  • 1 teaspoon serrano pepper
  • Pinch of salt

Directions:

  1. Dice the strawberries and peaches and add them to a medium-sized bowl.
  2. Dice the serrano pepper and add it to the bowl with fresh lemon and a pinch of salt.
  3. Toss all ingredients together.

Kiwi blueberry salsa

Serves 2-4

Ingredients:

  • 1 kiwi, diced
  • 1 cup blueberries, sliced in half
  • 1/4 cup jicama, diced
  • 1 teaspoon ginger, freshly grated
  • Pinch of sea salt

Directions:

  1. Dice the fresh fruit, kiwi, blueberries and jicama and add them to a medium-sized bowl.
  2. Peel the fresh ginger, grate and then add it to the bowl.
  3. Add a pinch of salt.
  4. Toss all ingredients together.

Fresh pineapple salsa

Serves 2-4

Ingredients:

  • 1 cup fresh pineapple, diced
  • 1 cup red bell pepper, diced
  • 1/2 lime, juiced
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon jalapeño pepper
  • Pinch of sea salt

Directions:

  1. Dice the pineapple and bell peppers and add them to a medium-sized bowl.
  2. Chop fresh cilantro and add it to the bowl.
  3. Add the peppers, a pinch of salt and fresh lime juice.
  4. Toss all ingredients together.
