Summer strawberry peach salsa
Serves 2-4
Ingredients:
- 1 cup fresh strawberries, diced
- 1 cup fresh peaches, diced
- 1/2 lemon, freshly squeezed
- 1 teaspoon serrano pepper
- Pinch of salt
Directions:
- Dice the strawberries and peaches and add them to a medium-sized bowl.
- Dice the serrano pepper and add it to the bowl with fresh lemon and a pinch of salt.
- Toss all ingredients together.
Kiwi blueberry salsa
Serves 2-4
Ingredients:
- 1 kiwi, diced
- 1 cup blueberries, sliced in half
- 1/4 cup jicama, diced
- 1 teaspoon ginger, freshly grated
- Pinch of sea salt
Directions:
- Dice the fresh fruit, kiwi, blueberries and jicama and add them to a medium-sized bowl.
- Peel the fresh ginger, grate and then add it to the bowl.
- Add a pinch of salt.
- Toss all ingredients together.
Fresh pineapple salsa
Serves 2-4
Ingredients:
- 1 cup fresh pineapple, diced
- 1 cup red bell pepper, diced
- 1/2 lime, juiced
- 1 tablespoon fresh cilantro, chopped
- 1 teaspoon jalapeño pepper
- Pinch of sea salt
Directions:
- Dice the pineapple and bell peppers and add them to a medium-sized bowl.
- Chop fresh cilantro and add it to the bowl.
- Add the peppers, a pinch of salt and fresh lime juice.
- Toss all ingredients together.
