It’s the same old story. We know we need to start our day with breakfast but often we’re just too busy (or have slept in) to make anything nutritious. With a few simple ingredients you can have breakfast in minutes or take it out the door with you. Try these quick and healthy brekkie ideas — you might just be able to squeeze in a bite or two!
1. Egg is my friend
Enjoy some fluffy scrambled eggs by whisking 2-3 eggs, 1tbsp of milk, a sprinkle of low fat grated cheese, salt and pepper in a heat proof bowl. Zap it in the microwave for 1 minute, stir and zap for another 30 seconds (depending on the power of your microwave). Voila!
Boil an egg on the stovetop as you do your make-up or hair. A soft egg can take 5 minutes or up to 15 minutes for a hard boiled one. Crumble over wholemeal toast. Sprinkle with herbs.
Cut a hole in a slice of wholemeal bread and soft fry an egg in the middle.
2. Cream cheese crunch
Mix together a few tablespoons of light cream cheese, honey and cinnamon. Spread it on toast or a wholemeal crumpet.
Fill in a couple of celery sticks with cream cheese, dot with raisins and a little drizzle of honey. It’s a quick, crunchy bite to take away.
3. Popeye’s pal
Sautee a cup of spinach with olive oil, garlic, salt and pepper. When wilted, mound it on toast and enjoy the super-vitamin veg.
4. Brekkie wrapped up
Spread ham, sprouts and avocado on flat bread. Roll it up and run. Play with different fillings each morning!
5. The AM pizza
Cover wholemeal flat bread with a spread of pesto, tomato slices and low fat grated cheese. Grill for a few seconds until melted.
6. Whizz bang
A fruit smoothie is super easy and convenient if poured into a travel mug. Blitz in a blender 2 cups of milk, 1 tbsp of natural yoghurt, a squeeze of honey and a handful of your favourite fruit – banana and strawberry is delicious!
7. Sweet sizzling
Slice stone fruits in half (plums, peaches, apricots) and pan fry the flesh side until caramelised. Remove and drizzle with honey and yoghurt.
8. Moving muesli
Don’t go past topping muesli with chopped fruit and some low fat milk or yoghurt. Put it in a travel mug to eat on the run.
9. Muffin top
Toast an English muffin and top with cream cheese and a slice of smoked salmon.
