You don’t need to fire up the outdoor grill to get that great barbecued flavor we all love. Grilling in the kitchen gives you another option for great steaks, burgers and more.

Whether there’s a nip in the air, it’s raining, you’re out of charcoal or just feeling too lazy to deal with the grill, you can still have a barbecued meal with the same flavor as you would grilling outdoors. The most important component to grilling indoors is a grill pan, which will ensure that your steak has those telltale grill marks. Choose a grill pan that can withstand high heat and is ovenproof, like the Calphalon Unison Nonstick Grill Pan. Follow these steps for a perfectly cooked steak.

Step 1: Gather ingredients and equipment

The only ingredients you need for the perfect grilled meal is olive oil, salt, pepper and, of course, your choice of steak (about 1-1/2 inches thick). You’ll also need a grill pan, tongs, a timer, a plate and a piece of foil.

Step 2: Prep the meat

Let the steak sit at room temperature for about 30 minutes so the middle is not too cold when cooked. Drizzle a small amount of olive oil onto the steak and rub to coat both sides, then season both sides liberally with salt and pepper.

Step 3: Preheat

When the steak is ready to cook, preheat the oven to 450 degrees F. Also, preheat your grill pan on the stovetop over high heat, to about 400 degrees F. Be sure to turn your oven fan on, as cooking meat at high heat can produce smoke.

Step 4: Sear

Once your grill pan is hot, place the steak onto the pan and leave it there for 1-1/2 minutes, then flip the steak over and sear for 1-1/2 minutes on the other side. (Do not move the steak while it is searing.)

Step 5: Roast

After searing, immediately put the grill pan into the oven and cook for 2-1/2 minutes on one side, then flip the steak and cook for another 2-1/2 minutes. (This will result in a medium steak. Adjust time accordingly to desired doneness.) Remove from oven, being careful of the hot handle.

Step 6: Rest

Place steak on a plate and cover loosely with foil. Let steak rest for a few minutes before cutting.

Step 7: Serve

Serve the steak as is, or place a pat of butter on top to melt into the meat. Try making a compound butter to add more flavor to your steak., like chili or herb and garlic.
