This is my little pre-vacation meal secret, and it uses only ingredients that we already have in the pantry or refrigerator. They’re easy — and a family favorite!
Hard-boil whatever eggs you have on hand; peel and chop. Add horseradish, mustard, cumin, salt and pepper. Now comes the fun part: Add in yummies left in the fridge. These might be deli meat, chopped onion, diced tomato, shredded carrot, even shredded cheese.
Toast your few last pieces of bread or rolls, and top it with the egg salad for nice, zesty sandwiches.

Get creative with a simple, fun dessert that’s just so easy. Slice up a seedless watermelon. Get that half bag of chocolate chips out of the freezer and push those into the watermelon. You’ve gone from seedless watermelon to watermelon with chocolate seeds! The kids will flip over this one.
This healthy, protein-rich meal requires minimal prep time — but yields maximum satisfaction.
