No-bake carrot cake energy bites recipe
Lightly adapted from the cooking canuck
Yield: 16 to 20 energy bites, depending on size
Ingredients:
- 1-1/2 cups old-fashioned, gluten-free oats
- 1/4 cup pecans, finely chopped
- 2 tablespoons ground flax seed
- 1/2 cup maple almond butter or regular almond butter (you can also substitute peanut butter in this recipe)
- 1/4 cup raw agave, pure maple syrup or raw honey
- 1/2 teaspoon of vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 pinch ground cloves
- 1/2 cup shredded carrots
- 1/4 cup organic raisins
Directions:
- In a mixing bowl, add the oats, pecans and the flax seed.
- In a separate bowl, add all of the remaining ingredients, mixing very well until smooth.
- With a tablespoon or cookie scoop, scoop out the mixture. With your hands, roll into balls. Place the balls on a cookie sheet lined with wax paper and chill for a minimum of one hour.
- Serve chilled or at room temperature. Keep remaining bites in an airtight container for up to one week in the refrigerator.
