No-bake carrot cake energy bites

These no-bake carrot cake bites are out-of-this-world delicious! Rolled oats, shredded carrots, plump raisins and pecans are blended with spices to create this super healthy bite-sized treat for kids of any age.

These treats are amazing! Full of healthy ingredients, these are the perfect snack for your kid’s lunch box or as an after-school treat. Make a big batch and keep them on hand for guilt free snacking made easy.

No-bake carrot cake energy bites recipe

Lightly adapted from the cooking canuck

Yield: 16 to 20 energy bites, depending on size

Ingredients:

  • 1-1/2 cups old-fashioned, gluten-free oats
  • 1/4 cup pecans, finely chopped
  • 2 tablespoons ground flax seed
  • 1/2 cup maple almond butter or regular almond butter (you can also substitute peanut butter in this recipe)
  • 1/4 cup raw agave, pure maple syrup or raw honey
  • 1/2 teaspoon of vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 pinch ground cloves
  • 1/2 cup shredded carrots
  • 1/4 cup organic raisins

Directions:

  1. In a mixing bowl, add the oats, pecans and the flax seed.
  2. In a separate bowl, add all of the remaining ingredients, mixing very well until smooth.
  3. With a tablespoon or cookie scoop, scoop out the mixture. With your hands, roll into balls. Place the balls on a cookie sheet lined with wax paper and chill for a minimum of one hour.
  4. Serve chilled or at room temperature. Keep remaining bites in an airtight container for up to one week in the refrigerator.
