If you live in a warm climate, plant kale in October to November for a late winter harvest. If your climate is cooler, plant kale seeds in the fall and cover with straw to insulate. The greens will be get a head start on growing in the spring.
In any situation, kale should be planted anytime the ground is workable. Sow seeds ¼-½” deep, one inch apart in rows 18 to 30 inches apart. Plant in full sunlight with a neutral soil pH. Thin seedlings to about 8 inches apart. Kale germinates easily in cool or warm soil temperatures with even moisture, and it is very tolerant to cold weather.
