The cabbage family of vegetables is a predominant garden staple in the cooler months. I have broccoli and cauliflower growing in my garden right now! Try roasted cauliflower or broccoli for a different take on the familiar veggie. Roasting really brings out the sweet flavors that you don’t taste when prepared boiled or steamed.
Winter squashes of all varieties are in season now. Butternut and Acorn are common additions to the Thanksgiving table, but something different, like Turban or Spaghetti squash can be a fun twist.
Don’t forget the parsnip, which is great on its own, added to a roasted vegetable medley or mashed into potatoes or squash for a more complex flavor. Radishes are in season too. Serve them on a vegetable crudite plate, or try something really unexpected–like radish top soup.
