10 Simple lunch surprises we love

You may not be able to check in with your loved ones until the end of the day but that doesn’t mean you can’t let them know that you are thinking about them. And if you pack them a lunch, then it’s the perfect vehicle to do just that. Here are a few ways a little lunchbox surprise can brighten up the day.

Shapely sandwiches

Use a large cookie cutter to cut the sandwich into interesting shapes. Go for stars, triangles, circles or even animal shapes.

Fancy fillings

Try a different filling for each day of the week and it will be impossible to get bored. Choose from ham and cheese, chicken and avocado, tuna and mayonnaise, roast beef and tomato relish, and even good old peanut butter and jam.

A sweet treat

Keep the treat bite sized and occasional — that way they’ll be enjoyed more when they do land in the lunchbox. Include a favourite chocolate, a small bag of mixed lollies or some homemade cookies.

Something other than a sandwich

Why not try a sandwich-free lunch at least once a week to keep it interesting? Left over pasta bake from the night before, a slice of frittata, or some homemade sausage rolls are sure to go down as a treat.

Dip in

Add some protein and fibre to lunch with chopped celery and carrot sticks that can be dipped in hummus or salsa.

Mixed fruit

Prepare a mixed fruit salad and pack it in a mini container for a healthy, yet sweet snack. For a different take on the traditional fruit salad, serve the pieces of fruit on a kebab stick or on multiple toothpicks.

Homemade cake

There’s nothing like a fresh slice of homemade cake to make lunch more exciting. Keep it healthy by baking with wholemeal flour, oats, bran and wheat germ. Opt for a low sugar banana and date loaf or carrot and walnut cake.

Pasta salad

Add vegetables and salad ingredients to cooked pasta for a nutritious and filling meal.

Leave a note

Everybody loves a lunchbox note and it’s an easy way to show your loved ones that you care. Jot down their favourite song lyric, include a reminder, or simply tell them that you love them. A little thought can go a long way.
