Restaurant copycat: Starbucks vanilla bean scones

You know what pairs perfectly with your homemade cup of coffee? One of these sweet petite vanilla bean scones! They taste just like the ones you’d get at Starbucks, but fortunately don’t come with the loud, pretentious hipsters and don’t cost you more than $5.

These adorable little scones are cute, but that’s not all. Each bite is filled with rich vanilla bean flavor and is topped with a luscious glaze. And unlike the ones you buy, these are made with 100 percent all-natural ingredients, so you can rest assured each flaky, buttery bite is preservative-free.

Copycat Starbucks vanilla bean scones recipe

Yields about 8 scones

Ingredients:

For the scones

  • 1 cup all-purpose flour
  • 1-1/2 tablespoons vanilla bean cane sugar
  • 1/2 tablespoon baking powder
  • Dash of salt
  • 3 tablespoons cold butter, cut up
  • 1/4 cup heavy cream
  • 1/2 tablespoon vanilla bean extract
  • 1-1/2 tablespoons egg whites

For the glaze

  • 1-1/2 tablespoons heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla bean extract

Directions:

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
  2. Whisk the flour, baking powder and salt together in a mixing bowl. Cut in the cold butter until the mixture resembles coarse sand. Make a well in the center and add heavy cream, vanilla bean extract and egg whites. Mix with a spoon to combine.
  3. Using your hands, mold the batter into a soft dough. Roll the dough with your hands and cut into two pieces. Then using a sharp knife, cut the dough into 8 small triangles.
  4. Place the triangles on the parchment paper and bake for about 9 minutes, or until slightly browned.
  5. Mix the glaze together by whisking the cream, powdered sugar and vanilla together. Once scones have cooled, brush with glaze.
