Starbucks copycat pumpkin scones

On behalf of pumpkin lovers everywhere, we are sharing our version of Starbucks pumpkin scones. Baked up fresh right in your own kitchen, these pumpkin scones are topped with sweet glaze and taste like they came straight from the coffee shop.

One of our favorite desserts is the pumpkin scones from Starbucks. Here we share our spin on these seasonal treats. It’s very important to allow the scones to cool before adding the glazes and also to allow the glazes time to fully dry. Now you can enjoy these delicious pumpkin scones any time of the year.

About 10 (serving size varies with size of scone)

Ingredients:

For the scones

  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1-1/2 tablespoons pumpkin pie spice
  • 6 tablespoons cold butter
  • 1/2 cup canned pumpkin
  • 3 tablespoons heavy whipping cream
  • 1 large egg

For the white glaze

  • 1 cup powdered sugar
  • 2 tablespoons heavy whipping cream or milk

For the spiced glaze

  • 1 cup powdered sugar
  • 2 tablespoons heavy whipping cream or milk
  • 1 tablespoon pumpkin pie spice

Directions:

  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Combine the dry ingredients in a large mixing bowl. Use a pastry blender or food processor to cut in the butter until the mixture is crumbly in texture and resembles coarse cornmeal.
  3. In a small bowl, whisk together the pumpkin, heavy whipping cream and the egg. Fold into the dry ingredients until barely combined. It is very important not to overmix the batter. At this point it should still be kind of dry and crumbly.
  4. Form the dough into a ball and on a lightly floured surface roll into a 1-inch thick rectangle.
  5. Cut the dough into desired shape and place each scone on the baking sheet. Bake for 14 to 16 minutes, until the scones are golden brown. Remove from the oven and allow to cool completely (do not skip this step or the glaze will melt).
  6. In two small bowls, prepare each of the glazes by adding the ingredients listed for each glaze and mix very well until smooth. Add the spiced glaze to a decorating bottle with a thin tip and set aside.
  7. To glaze the scones: Dip the tops of each scone into the white glaze. Allow to harden for 20 minutes. With the decorating bottle filled with spiced glaze, draw lines or zigzags across the top of each scone and let dry a second time for about 1 hour (this glaze is usually thicker and requires more time to harden).
  8. Once the glaze is completely hardened store in an airtight container.

Tip

If you don’t have a decorating bottle simply fill a zip-closed bag with the glaze and cut a very small hole in one end.
