Creative uses for leftover Easter chocolate

Do your Easter baskets overfloweth? Loads of chocolate should not go to waste! If you’re tired of eating those bunnies just as they are, we’ve come up with some fun ways to use that chocolate.

Your sweet tooth looks forward to Easter every year — the endless piles of chocolate Easter eggs and bunnies are a dream come true. Have more than you know what to do with? Sure, you could save it and eat it over time straight out of the pretty foil wrappings and colourful boxes, but why not have a little fun with it and use it in some recipes? Some DIY sweets you can show off to friends? They’ll be so impressed (and won’t be able to tell how simple your candies were to make!).

Peanut butter cups

Chocolate is wonderful, but chocolate paired with peanut butter is a match made in heaven. You can make these peanut butter buckeyes, but if you have your heart set on peanut butter cups, then follow the same recipe for the buckeyes, but make sure to have paper cupcake liners on hand. Pour a layer of chocolate into the cupcake liners (set in a muffin tin), and then place the tin in the freezer until the chocolate sets a bit. Then pour the peanut butter mixture on top, distributing it evenly over all the liners. Let it set, then finish by topping with the remainder of the chocolate mixture. Let cool completely.

Chocolate cereal clusters

Everyone’s favourite homemade cereal snack, Rice Krispie squares, but made with chocolate? Yes! Follow your usual recipe, but melt some chocolate into your butter and marshmallows, and form into clusters. If you want a nutty treat, throw in some peanuts or almonds too. Use your hands to form into clusters or balls, and then let them cool. Or if you have mini eggs left over from Easter, simply mix those into your Rice Krispies mixture so that the eggs stay intact inside the squares. (Finding one in your treat will sort of be like an Easter egg hunt all over again!)

Chocolate bacon bark

Are your taste buds craving something savoury after all that Easter sweetness? Why not incorporate bacon into your leftover chocolate? Fry bacon until crisp, lay it on a paper towel to cool, and then crumble it into small pieces. Melt your leftover Easter chocolate, and mix in the bacon pieces. Spread the mixture over a cookie sheet covered in parchment paper, and once cool, break the bark into manageable-sized pieces for storage in an airtight container.

Chocolate egg cookies

OK, this one couldn’t be simpler. Use your Easter mini eggs or Hershey’s Kisses in place of chocolate chips in a chocolate chip recipe. Most chocolate eggs are slightly sweeter than your typical chocolate chip, so it’ll be a brand new cookie experience. Try them in your muffins too. These won’t necessarily have wow factor, but wait ’til you taste the difference from using regular chocolate chips.

Chocolate spoons

Slowly melt your leftover chocolate, and dip spoons into it, covering the entire spoon but not the handle. Lay the spoons on a cookie sheet, and place them in the fridge to solidify. You can then offer these chocolate spoons the next time you serve hot chocolate. Your guests will be so impressed with your gourmet stirrers.
